The Molino Staff.

Whilst Molino is praised for all of its aspects, the greatest adulation is usually reserved for the staff. The owners are extremely proud of them and their commitment to providing Molino customers with extremely efficient, professional but friendly and genuinely caring service.
According to season the hotel employs up to 30 people, the majority of them on full time contracts.

 

There are six departments at Molino, made up as follows:

Ownership : The hotel is owned totally independently by Andy Chapell and Pauline Elkin. They bought the hotel in 1986 and opened it in 1987 along with two other partners who left in 1988. Andy and Pauline no longer live all year round on the hotel site but each one visits the hotel for at least a week every month and during all school holidays and July and August they and their family are based at Molino. Pauline is responsible especially for overseeing the restaurant and decoration. Andy deals with finance and overall planning.

Management : When Pauline or Andy are not at Molino, the day to day management is the responsibility of Paco Ramirez and Inma Sanchez. Paco and Inma co-ordinate with the owners on a very regular basis. Between them Paco and Inma have nearly thirty years experience at Molino so should be able to help you sort out any problems.

Reception : Paco Ramirez is head of reception and also deals with all of the accounts department. Inma is number two in reception and is also responsible for the implementation of the hotel’s commitment to ISOs 9001 (Quality) and 14001 (Environmental Protection) as well as the ongoing implantation of the Q of Quality, a Spanish hotel standard. Paqui Hidalgo is our third receptionist with special responsibility for customer communication and feedback. Francisco Rosa makes up the reception team with responsibility for marketing and IT matters.

Maintenance and Gardens : Paco Lopez is head of maintenance. He is a phenomenon being able to turn his hand to so many aspects of our machinery. Sergio Amaya is in charge of all of our gardens and also takes on many of the maintenance projects, particularly the painting of the buildings, internally and externally. We use other people to assist with maintenance and gardens in the busier periods.

Cleaning : We reckon we have one of the best cleaning teams of any hotel anywhere, headed up by Juani Tornay. She is supported by Veronica Amaya and Eva Palacios. They have each been working for the hotel for more than fifteen years and demonstrate huge professionalism and commitment to their roles. We employ other cleaners to cover holidays.

Restaurant service : Split into the kitchen and waiting staff, this is the department which employs most people.

The head of our kitchen is Reme Palacios who started at Molino twenty years ago. She is a very meticulous person who one can guarantee will always give of her very best. She is supported by Andres Aguilar and Rafa Alba as heads of service, each of whom have worked at Molino for more than fifteen years. We have a team of kitchen assistants who do a lot of the more repetitive backroom work with great cheerfulness; they are Yoli del Valle, Jaqueline Castano, Mari Carretero and Manoli  Roman.

Our waiters are also long-serving/suffering. There are three who take on the role of head of service, Victor Amaya, Diego Castano and Barbi Garcia. Victor is responsible for ordering wines, spirits and other drinks whilst Diego is in charge of ordering crockery and cutlery and other consumables and also analysis of information and timetables. Our waiting assistants are Eva Sanchez, Yoli Redondo, Nena Gonzalez and Paqui Roman.
